I have a healthy veggie breakfast this morning. my wife prepared a bitter gourd (ampalya dish) for our breakfast. it is so yummy because this type of Filipino dish is my favorite and it is also a good source of protein. It is so easy to prepare, all you have to do is to buy 2 Pisces of ampalaya (approximately 10 grams) and slice it light half moon in a quarter shape. After slicing, prepare 2 medium size egg and beat it. Preheat the pan, add a little of oil then pour the bitter gourd in a pan, saute it in a few minutes then add the egg. Mix it a little then your done . It can make 3 to 4 servings. This Filipino dish is so economical and yet so healthy. It is also good for diabetic persons because Bitter gourd can regulate the blood sugar. So if you have a chance to prepare a healthy veggie dish , try to have a bitter gourd dish for you.
