My Own Specialty Pan-Fried Shrimps

I'm going to share to you my one of my specialties in shrimp menus The Pan-fries shrimps.

Ingredients:

1 lb./455 grams raw shell-on shrimps

defrosted if frozen

3 small red chilles, deseeded and chopped

2 cloves garlic, chopped

1 in/2 1/2 cm piece fresh ginger, chopped

1 shallot, chopped; 2 tbsp. groundnut oil

1 onion, chopped; 2 tomatoes, quartered

1 tsp. sugar; salt

Shell the shrimps, leaving the tails attached. Cut a slit along the back of each shrimps with a sharp knife and remove the thin black vein. Rinse well, then refrigerate until needed.

Blend the chillies, garlic, ginger and shallot to a paste in a food processor or with a mortar and pestle. Heat the oil in a large, heavy-based frying pan or wok over a high heat, then fry the onion for 2 minutes to soften slightly. Add the paste and stir-fry for 1 minute to release the flavors.

Add the shrimps and tomatoes, mixing thoroughly, then sprinkle over the sugar and salt to taste. Fry for 3 to 5 minutes, until the shrimps turn pink and are cooked through, stirring often.

It's well worth splashing out on large raw shrimps for this spicy dish. But ready-cooked shrimps are still tasty and take only a minute to warm through. Serve with rice

Enjoy the dish I'm sure you will like this menu of mine.

HAPPY COOKING!!!
